The course

This course will focus upon the recipes used in a Tudor bakehouse. We shall be exploring the full range of different types of pastry used during the period and the uses they were put to.

We will hand raise hot water crust pies, make cutwork short crust pie lids, produce our own flaky pastry, deep fat fry an early version of choux pastry and rustle up a few cheap and cheerful coffins.

Whilst we are busy baking we will be discussing the role of the pie and pie shops in Tudor life and looking through a wide range of recipes and period images.

Tutor

Ruth Goodman is a leading member of the Tudor Group, an historical interpretation society which concentrates on the Tudor period.  She is particularly interested in the domestic tasks of ordinary people, cooking, cleaning, brewing and dairy work, as shown on the ‘Victorian Farm’ TV programme. She has undertaken work at Shakespeare’s Globe Theatre, The Mary Rose, St Fagans Museum and Ulster History Parks as well as events for the National Trust and English Heritage.

Participants

Places are limited to 8 participants.

Cooking will be over open fires, so please wear appropriate clothing, (long trousers from natural materials and no open toe shoes).

Fee

£60, to include teas and coffees. The Museum café will be open or please bring your own packed lunch.

The Museum

The Weald & Downland Open Air Museum has over 45 historic building exhibits.  It is also home to the award winning and innovative Downland Gridshell, which houses a conservation workshop and artefact store, and is also used for many practical courses.  The Museum runs a full programme of courses in historic building conservation and traditional rural trades and crafts, along with MSc programmes in Building Conservation and Timber Building Conservation.
